Resveratrol powder (3-4'-5-trihydroxystilbene) is a non-flavonoid polyphenolic compound whose chemical name is 3,4',5-trihydroxy-1,2-diphenylethylene (3,4 ',5-stilbene), the molecular formula is C14H12O3, and the molecular weight is 228.25. The pure product of resveratrol is white to light yellow powder, odorless, insoluble in water, easily soluble in organic solvents, melting point 253~255ºC, Sublimation temperature 261 ºC.
Natural resveratrol powder has two structures, cis and trans. From grape skins or knotweed,It mainly exists in trans conformation in nature. The two structures can be combined with glucose to form cis and trans resveratrol glycosides. The cis- and trans-resveratrol glycosides can release resveratrol under the action of glycosidases in the gut. Under UV light irradiation, trans-resveratrol can be converted to the cis-isomer.
